Peanut Butter & Cacao Granola

Yay, it’s humpday! Today I am going to share with you a crazy good (and addictive) granola recipe! You’ll be surprised at how easy and fast this recipe is, I know I sure was!

One thing I love to do is cook/bake! I am almost always in the kitchen testing out new recipes and experimenting with new foods. For me, it’s something I enjoy and find so pleasurable. Every now and then my friends and I will even get together and try out new recipes- talk about major fun right there! Or, if I find something sooo good and absolutely love I’ll stop what I’m doing and text it to my friend right then and there (hey Miranda, that’s you ;))!

One way I find great recipes is by following food bloggers on Instagram, or, another is finding them in health food cookbooks. The recipe that I’m sharing with you today is adapted from Rachel Mansfield‘s blog, but of course, I put my own twist on it 😉 It’s chocolaty, peanut buttery, crunchy, and crazy good!

Granola is such a great thing because of how easy and versatile it is. You can have it for breakfast, as a snack, use it as a topping, or you know, use it to cure all other major problems… haha if only 😉 Okay, now onto the recipe…


What you’ll need:

Microwave safe bowl

Mixing bowl


8×10 pan

parchment paper

Ingredients you’ll need:

1/4 cup natural peanut butter, crunchy or smooth

1/4 cup coconut oil

1/4 cup maple syrup, or less if desired

1/2 tsp vanilla

2 tbs cacao powder

2 1/2 cups gf oats, or regular oats

1/2 c quinoa/ amaranth mix, or sub in more oats


  1. Start by preheating your oven to 350 degrees, then line the 8x 10 pan with parchment paper and set aside.
  2. Place the cacao powder, oats and quinoa/ amaranth blend in the mixing bowl and set side.
  3. Place the coconut oil, peanut butter, and maple syrup in a microwave safe bowl. Microwave for 30 seconds, stir, and then microwave for another 30 seconds. After, mix all the ingredients together and make sure the coconut oil is melted all the way through. Add the vanilla, stir, and then pour over the dry ingredients in the mixing bowl.
  4. Stir all ingredients together with the spatula and then pour onto the lined pan. Spread out the mixture evenly and pat down with the spatula. The thicker you have it patted down the more clusters/ chunks there will be- do so according to preference.
  5. Once done place in the oven for 15 minutes. After the 15 minute mark take out and stir. This helps ensure that it gets cooked all the way through. Place back in the oven for another 7-10 minutes and then take out.
  6. Once the granola has cooled you can place it in a container and store in the fridge for up to a week.

And there ya have it! A quick, simple, and easy recipe. You can now have this granola with almond milk, dairy-free yogurt, on top of oatmeal, or just grab a handful for a snack. Anyway you have it I’m sure you could do no wrong- enjoy!

We all have those moments. Ya know, those short little freakout moments where we feel like the world is going to end and everything is about to explode… ya, those moments. In that time we start to question our abilities and question why we even signed up to put ourselves through something in the first place. Like hello, how in the heck did I sign up for Mondays?! 😉

All jokes aside, I really do enjoy Mondays, and every other day of the week that is- haha! 🙂 When we have those moments we just need to take a step back and have a short, little inspirational talk with ourselves, even if it’s just a quick, “okay, I can do this!”

When we take the time to take a step back and reflect on our thoughts and actions we can do a quick self-check. We can think about how we are affecting ourselves and others. For instance, if I were to overly stress out on an assignment to the point were I become in a bad mood I could act out towards my siblings. In doing so, I would not be acting or behaving to my fullest potential. But, when I take the time to acknowledge my thoughts and feels I can keep them in check and at bay. I just have to say to myself, “I understand why I am acting this way, and that’s okay, I need to change this energy to positive energy”. You might think it’s silly but it really does make a difference. It helps power you through the never ending days and the days where you are too overwhelmed. Even if it’s just waking up on a Monday and not wanting to get out of bed. Acknowledge that mindset, decide to change it, and say, “Okay Monday, let’s do this!”. And boom! tackle the day head on.

Do it.

Try it.

Talk to yourself.

I encourage you to give ourself little pep-talks throughout the day and see how it goes. If you are feeling ~extra~ inspirational post quotes, sayings, and montras all around you- as a screen savor, in your room, on the refrigerator, you get the picture… In my house my mom currently dedicated the microwave as a gallery for fun and inspirational quotes- thanks Mom!

Finding Your Fire

e695b0429581ac35361d22b42260e3e3Finding your passion, aka your fire, can be a life long journey. Some people know what theirs is all their life, and others take their whole being just to find it. Finding your passion is more than just finding a career that’s related to it, it’s also about finding yourself and finding what makes you happy. Once you are genuinely true to yourself and happy, people become attracted to you and want to watch you succeed. They want to watch and cheer you on in setting your fire in flames!

If you are at a point in your life that you aren’t too sure what is your fire that’s okay- just do a little soul searching and digging. And, in order to find your passion, or passions, pay attention to what makes you the happiest in your day-to-day life. If you love spending time with children and enjoy caring for them, then maybe your passion is helping, caring, and advocating for children. Maybe you feel so strongly about this that you see yourself switching career fields down the road, or taking time each week to volunteer with children. Finding your passion(s) and setting it on fire will make you feel alive and free! So, find yours, if you haven’t already done so, and go after it!

If you find yourself passionate about more than one things that is a-okay! Some people get too hung-up on finding only one thing they care about and forget all other things that really matter to them as well. I think that it is an amazing thing to feel passionate about several things because it keeps your fire burning longer and makes your life more exciting! For instance, if I had to, I could not just pick one thing that I feel passionate about. I love caring for people, helping animals, advocating a healthy lifestyle, and more! Having all of these things that I feel so strongly about make me, me and bring me so much joy to my life! Everyday I get to do something I love in some form or another and it fills my heart with so much joy and fulfillment!

Good Morning!

Do you reach for your phone? go for a brisk walk? think about all the things on your to-do list? make an energizing smoothie? Whatever you do, chose wisely becasue how you spend your first few moments in the morning set the tone for the rest of your day. If you want to be the happiest and healthiest version of yourself then commit to making your morning routine light, uplifting, and energizing.

I am an early bird naturally and mornings have always been my favorite part of the day. In the mornings everything is so still and peaceful. You can hear birds chirping and the wind against the trees. There is something so calming about taking it slow and enjoying time to yourself to prepare for the day ahead.

If you wake up in the morning and the first thing you do is start to stress out about your to-do list then you’ll spend the rest of your day in stressed-out mood. Or, if you wake up and start to look through social media and fill your brain with negative post/ thoughts, then you’ll spend your day with a negative attitude. And doing this is not helping us at all, it is only tearing us down. We need to become the best and happiest versions of ourselves daily, so what will you do?!

If you have to, set your alarm for a few minutes earlier than normal, or, sleep with your window shades open and wake naturally with the sun. After waking start you day with your routine. If you don’t have one take a few mornings to test out different routines. It could be as simple as washing your face and journaling, or doing yoga and making breakfast. Just find one that works best for you and make it one that you enjoy!

For me and my routine I sleep with my window shades open and wake with the sun. Then I enjoy a drink of warm lemon water followed by breakfast. Shortly after that I’ll head to the gym. And there ya have it! With this routine I fell happy and content knowing that I am taking time for myself daily to become the happiest and healthiest version of myself possible.

I hope this post inspired you to set a daily morning routine for yourself- if you didn’t already have one- becasue it is so important to start off our days on the right foot and with good intensions. And, after a while you’ll get excited and happy to wake up in the morning and spend sometime with yourself. And who knows, maybe you’ll even become a morning person 😉

Living Over Existing


Are you living in your life, or are you just existing in it? Do you cherish each and every moment you have, or do you just kinda float by? If you chose the latter, ask yourself why and think about it for a moment… why aren’t you living in your life?

Right now you might be thinking, “what does that even mean?”, well, let me explain…Living in your life means you do things that make you feel alive and whole. You take risk, do things that make you happy, and surround yourself with amazing people. Maybe somethings that make you feel alive are: going for a morning walk in the warm sunshine, reading a new book, taking that new and exciting job offer, or spending time with friends and family. Anything and everything that makes you happy can also make you feel alive.

When you live in your life rather than just exist in it you create the life you have imagined. Aside from creating your ideal life, you also become more at peace with the world around you. You become more open and welcoming to anything the universe throws at you. You learn to tackle big tasks head on and solve problems in a cool, calm, and collected manner. Your emotions are in check, you feel stable, and you feel at peace with yourself.

Now, if you are just existing in your life you could be missing out on one pretty amazing life. You might not realize it, but, I bet you aren’t living to your fullest potential or living the life you’ve imagined. You don’t do things that make you your happiest self, or find joy in the tiny moments of your life. And why is this? Do you have a job that make you feel run down? are you not taking proper care of yourself? do you have negative energy in your life? I want you to pinpoint what it is in your life that is holding you back and let it go. Once you let it go make an effort to live in your life. Do things that make you happy and cherish each and every moment! Eventually you’ll start to see things fall in place and you will be living the life you have imagined!

Take today to do at least one thing that makes you happy, even if it is just for five minutes! Cherish the little moments and find joy in them!

Don’t Wish Your Time Away

So often we hope for our future and wish to already be there. We wish we already graduated from college and had a real job, we wish we lived in the perfect house with the perfect family, and we wish we could be anywhere in our future lives, but here, right now… This is great and all, but what we are actually doing is wishing our time away.

We have sooo much life to live with our few short years here, so why are we wishing so many of them away? We need to live through every moment in our lives and learn from our susses, mistakes, failures, and achievements. We need to be present in the moment and be grateful for what we do have, not what we wish or hope to have. It’s so easy to forget about the present and what’s going on around us that we kind of just coast through it… We get lost in the imagination of our own minds with our thoughts and dreams. We think about “what if” scenarios and try to picture our future selves with the best in mind. We get so hopeful and excited about it that we wish we were already there living and breathing it. We get it in our minds that it would be better to fast forward a few years and hop right there, bypassing all the “little things” that will eventually get us there.

Instead of wishing our time away we should be grateful and excited for all the time we do have. With this time we can learn more about ourselves and be grateful for it. We can learn what we do and don’t like, what our values and goals are, and what we can accomplish. We can learn and experience new things with other people and form deeper relationships. We can travel the world and explore all the hidden wonders. There are so many things we can do right now the possibilities are endless, but if were to wish this time away we wouldn’t get to experience them.

With that said… what is it about the future that you are so excited about? Do you want to start a new job? create a business? make a podcast? form deeper relationships? What is it that you want from the future that you could start doing or creating right now? If you feel that you lack the time and resources right now stop telling yourself that and create them! If it is that important and valuable to you you will find a way to make time and resources becasue you deserve to be excited and happy about you life right now. You can do anything and everything you set your mind to right here, and right now. If you want a new job, then get a new job! Don’t wait until the future to get it, even if it’s not what you hope to have as an end career you can still get one step closer with a bigger and better job. If that is what it takes for you to be happy and live in the present moment then do it!! There is nothing wrong with that and you deserve and owe it to yourself to be happy!!
